Christmas Cookie Cookbook Contest!

In honor of my 200th post I thought it would be fun to have a little giveaway. The winner will receive a Gooseberry Patch Christmas Cookie Cookbook as well as a copper gingerbread man cookie cutter. All you have to do to be considered is tell me you would like to enter in the comment section of this post. If you give one of your favorite Christmas cookie recipes your name will be entered TWICE! The contest will be open until Wednesday night, November 22 at 10p.m. EST. I will announce the winner on Friday, November 24! This will give the winner plenty of time to try some new cookie recipes for Christmas! Miss Bonnie will again pick the winner's name out of the hat! I can't wait to hear all of your good cookie recipes!

Peanut Butter Cookies

1 cup sugar
1 cup peanut butter
1 egg

Mix well and form into balls. Criss-cross with fork. Bake at 350 degrees for 10 - 12 minutes. Remove from oven. Allow to cool slightly on baking stone before removing to a rack for further cooling. Enjoy!

Hello, I am a new reader of your blog and would love to enter your competition.

Here is my favourite cookie/biscuit recipe:
The King of our Castle's Favourite Biscuits! This makes 12 rich and delicious biscuits which my husband adores. Originally the recipe came from a MacDougall's flour cookery book.
Preheat your oven to 190 degrees c/375 degrees f/Gas Mark 5. Sparingly grease two baking sheets. Cream together 4oz/100g butter and 2oz/50g caster sugar. Then beat in 4oz/100g self-raising flour, 1oz/25g cocoa and 1t natural vanilla extract, making a stiff paste. Roll the paste into 24 marble-sized balls, place them on the trays, and with a fork dipped in cold water flatten the balls. Bake for 10 minutes. Cool on a rack, and when cold sandwich biscuits with chocolate buttercream made with 1T cocoa, 4oz/100g icing sugar, 2oz/50g butter and 2t hot water.

Hi Susan,
I've been MIA due to a nasty cold during the last few days, but I'm looking forward to catching up with all you've been doing! I would love to enter this wonderful 200th post contest...as you know, GP is one of my favorites! Here is my recipe:

Cowboy Cookies
1 cup butter
1 cup light brown sugar
1 cup white sugar
2 eggs
1 tsp. vanilla
2 cups plain flour
1 tsp. soda
1/2 tsp. salt
1/2 tsp. baking powder
2 cups rolled oats
1 small pkg. semi-sweet choc. chips
1/2 cup chopped nuts (I use pecans)

Cream sugars, butter, eggs, and vanilla until fluffy. Sift dry ingredients and stir in. Add oatmeal, choc. chips, and nuts. Drop by teaspoonfuls onto cookie sheet. Bake at 350 degrees for 10-12 minutes. Makes around 8 dozen

These are delicious...I use them for Christmas treats each year!

What a great way to start the Christmas season! My favorite Christmas cookies are:

Mexican Wedding Cakes

Cream 1 C butter, add 1/2 C sifted powdered sugar & beat until smooth. Add remainting ingredients; 1 tsp vanilla, 2 C sifted flour; 1/2 tsp salt; 1 C chopped pecans. Roll into balls - about the size of a small walnut. Bake 15-20 minutes at 350 degrees. Roll cookies in powdered sugar while still warm. Roll 2-3 times.

A contest-what fun! I love Gooseberry Patch books. Here's an easy recipe for you:
Pumpkin Cookies Recipe
1/2 cup sugar
1/2 cup brown sugar (packed)
1 cup butter/margarine (soft)
1 cup canned pumpkin
1 tsp. vanilla
1 egg
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp salt
3/4 cup valnuts

Heat oven to 350. Cream sugars and butter until light and
fluffy. Blend in pumpkin, vanilla, egg. Add
flour, baking soda, baking powder, cinnamon,
salt and blend well. Stir in nuts. Drop by
rounded teaspoons 2" apart on ungreased cookie
sheet. Bake 10-12 minutes or until light
golden brown.

My favorite Christmas cookie recipe---KOLACZKI!!!
This is my wonderful Grandma's recipe who went home to be with the Lord in February.
4 cups flour
1Lb. butter
1 tsp. milk
1/2 tsp. baking soda
1Tbsp. sugar
1/2 pint sour cream

Mix all dry ingredients. Cut in softened butter. Add sour cream. Cover and refrigerate over night. Roll dough on sugar &floured board to a 1/4 inch thickness. Cut into squares and fill with your favorite filling. (Mine is apricot)Fold two opposite corners together. Bake at 400 until golden (About 10 minutes) ENJOY!!!

hi Susan, here are some delicious bar cookies that I often make for a Valentines tea, but they can very well be used for a Christmas one as well. They are sooo easy to make, and they look like youve bought them.
Here goes:

Raspberry- Filled White Chocolate Bars

1/2c. margarine, or butter
1(12oz.)pkg. white vanilla chips
2eggs
1/2c.sugar
1c. all purpose flour
1/2tsp.salt
1tsp. amaretto or almond extract
1/2c.raspberry jam
1/4c.sliced and toasted almonds

Heat oven to 325. Grease and flour a 9 inch square pan, or 2qt. glass baking dish. Melt butter in small saucepan over low heat. Remove from heat. Add 1 cup vanilla chips. LET STAND< DO NOT STIR.
Beat eggs in large bowl until foamy. Gradually addsugar, beating at high speed until lemon colored. Stir in white vanilla chip mixture. Add flour, salt, and amaretto or almond flavoring. Mix at low speed until combined. Spread half of batter(1cup) in greased and floured pan. Set remaning batter aside. Bake at 325 for 15 to 20 minutes, or until light golden brown.
Meanwhile, stir in 1cup vanilla chips into remaning half of batter, and set aside. Melt spreadable fruit in small saucepan over low heat. Remove pan from oven. Spread melted fruit evenly over warm base. Gently spoon teaspoonfuls of remaning batter over fruit. Sprinkle with almonds.
Return to oven. Bake an additional 25 to 35 minutes or until toothpick inserted comes out clean. Cool 1 hour or until completely cooled. Cut into bars. Enjoy! christina Gomez

Here's my favorite Christmas cookie recipe. We like them here because they're delicious and they look like little snowballs!

Mexican Wedding Cookies

1 cup butter or margarine
1/3 cup sugar
2 teaspoons water
2 teaspoons vanilla
2 ¼ cup all-purpose flour
1 cup chopped pecans
¼ cup powered sugar

In large mixing bowl beat butter or margarine till softened. Add
sugar and beat till fluffy. Add water and vanilla and beat well.
Stir in flour and nuts.
Shape into 1-inch balls. Place on a ungreased cookie sheet. Bake in
a 325F oven about 20 minutes or till done. Remove and cool. In a
plastic bag gently shake a few at a time in powdered sugar. Makes
about 45

Farmhouse Cut-out Cookies
1 cup. Shortening
2 cups. Sugar
2 Eggs
1 cup. Sour Cream
1 tsp. Vanilla
4 1/2 cups. Flour
4 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt

Blend shortening, sugar, eggs, sour cream, and vanilla. Add the rest of the
ingredients. Mix well. Refrigerate for 1 hour. Roll out and use cookie
cutters, or refrigerate dough in a log shape for 2 hours and cut.

Congratulations on your 200th post!! Your blog is always so uplifting and encouraging!

Susan G. called herself a Gooseberry Patch Junky, maybe we need to comiserate about that one!! LOL Please enter me in the contest. Here's a delicious cookie recipe to add to the others. This recipe originally came from a friend's daughter. They absolutely melt in your mouth!

Pecan Puffs

1/2 c. butter, softened, plus extra to grease a baking sheet
2 Tablespoons sugar
1 1/4 c. pecans
1 1/4 c. all purpose flour
A few drops of vanilla
Powdered sugar for dusting

Preheat oven to 300 degrees, and grease a cookie sheet with butter. Beat the 1/2 cup butter in a bowl until soft, then beat in the sugar until creamy. chop the nuts VERY fine (or grind them in a coffee grinder or food processor). The nuts should resemble fine bread crumbs. Stir the nuts in to the butter mixture. Sift in the flour and add vanilla extract. Mix until mixture makes a soft dough. Roll the dough into balls about the size of walnuts and place on cookie sheet. Bake for about 25 minutes at 300 degrees. Sift powdered sugar over the puffs and put back into over for 2 minutes. Cool on a wire rack.

White Chocolate Chocolate Chip Cookies

1 cup melted butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 t. vanilla
2 c. flour
½ t. salt
1 t. baking powder
1 t. baking soda
2 cups oatmeal
12 oz. chocolate chips
4 oz. grated white chocolate
1 ½ cups nuts

Mix in order given. Refrigerate until chilled. Heat oven to 375°. Drop by rounded tablespoonfuls on greased cookie sheets. Bake for 10 minutes.
