One of the Best Parts of Waking Up
A "Yummy" Breakfast!










Banana Struesel Muffin, peaches, orange juice and a nice hot mug of orange spice Tea! Mmm! These muffins are made from another recipe from the Bed and Breakfast cookbook. They are wonderful!









Banana Streusel Muffins

2 cups flour
1/2 cup sugar
2 tsp. baking powder
1/2 teaspoon each: baking soda, salt and cinnamon
1/4 teaspoon nutmeg
1 1/2 mashed bananas
1/2 cup buttermilk
1/3 cup vegetable oil
1 egg
1/4 cup chopped pecans

Preheat oven to 375 degrees. Grease muffin cups. In a large bowl mix flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. In separate bowl, combine bananas, buttermilk, oil, egg. Stir into flour mixture until just moistened. Fill muffin cups about full. Sprinkle with a mixture of 1/4 cup brown sugar, 1/2 tsp. cinnamon and 1/4 cup chopped pecans. Bake at 375 for about 17 minutes. Makes 9 muffins.
**These muffins freeze really well so a lot of times I double the recipe.

Susan, these muffins sound wonderful and I just happen to have some nice ripe bananas. Maybe we will have them with tea tomorrow ~ yum!

Karen, well, I almost fell off my chair when I read how expensive bananas were in Australia. I only paid 46 cents a pound for mine. Maybe you could try my pumpkin bread recipe instead~ LOL!
