A Bounty


We have a garden and every year we are blessed with a "bounty" of zucchini. I have tried many different ways to make it, I've sauteed, boiled and fried it. I have to say that my family's favorite way of eating it is when I make zucchini bread!
I spent my Saturday afternoon baking bread!

It is delicous served with a cup of tea!


For supper that night we had chicken stir fry with the zucchini from our garden as well as peppers, carrots, onions and mushrooms. Yum! I love how all the different colors make the dish look so pretty!



I am posting my zucchini bread recipe. I have tried many, many different ones and this is by far the best!

Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
1 tsp. salt
3 cups flour
3 tsp. cinnamon
1 tsp. soda
1/4 tsp. baking powder
2 cups grated zucchini
add 1/4 cup raisins or nuts if desired

Combine all ingredients and place in 2 greased bread pans. Bake at 325 degrees for 1 1/4 hours.

Marie, I can't believe you lived in the Petersburg area! My grandparents lived for 30 years right off of Westover Ave. Are you familiar with it? I was a member of St. Marks Methodist Church for years! My Mom took me every year to sit on the "legendary" Santa's knee! I remember I thought the queen (can't remember her real title) was the most beautiful creature in the world! I'm not sure what the hat lady's name is. She told me she had worked their for thirty years!! It probably is. I just can't believe what a small world it is!

It was the "Snow Queen" who talked to the children before they went to sit on Santa's lap, she then relayed their names to Santa so that he magically knew their names as they approached him for their visit. My daughter wanted to grow up to BE the Snow Queen!! There is actually a lovely book for sale (check Amazon) all about the Miller & Rhoads years. It is a very small world! I'm enjoying your blog very much. Your handkerchief post gives me some ideas about cross-stitching (which I absolutely love) some plain ones using waste canvas. Thanks for the inspiration!
